"Eye" Hope you have a Lovely Halloween!

In the spirit of Halloween as it rolls around the corner this week I thought I would share a little fun Halloween treat that I put together for some friends. I saw the idea on the lovely Pinterest, where else these days?

Well I didn't actually read or follow any instructions, but if you want to check out the original makers or idea-ers of these lovely goods you can check them out HERE. But Just seeing the picture on pinterest I had a pretty good idea of how I wanted to throw it all together.

I have recently become a new found friend and fan of cake pops, especially since I acquired myself one of these lovely fellows.


So I got a cake box mix, whipped it up and using this little friend made a bunch of cake balls. Then I put then in the fridge to cool down some.

Then I melted some white chocolate melting discs, and using a fork dipped the little balls into the chocolate and then placed then it little mini cup cake linners. Then with the quick assistance of my hubby, he placed the chocolate chips and gummy lifesavers on the white chocolate before it hardened (you could probably do this by yourself, but having an extra hand definitely helps make it go quicker and less messier).
And there you have it! Yummy cake eyeballs, ready for a yummy Halloween treat!

Chocolate Banana Chips!

Sorry for being slow this week. I know it shouldn't make too much difference, but it does, but when my husband is in both school and working, it makes my life feel a little crazy too, especially with the one car. So because his week was crazy, mine was too. Oh well, such is life.

But this weeks yummy food venture is probably one of my all time new favorite treats! (I probably say that about every treat I share, but I guess I just like so much goodness out there, it's okay to have more than one favorite, right?)

It's been a while, but I pretty sure I found this on pintrest, but I can't find a link for it or remember where exactly I had the original recipe, so much apologies to the origanal somewhere out there, I would reference you if I could find you.

But on to this amazing goodness. I LOVE cream puffs, but they are ridiculously expensive, especially since they are SO tempting to finish in one sitting (at least for me), which can then make them pretty unhealthy to eat them all in one whack like that (which is extremely hard for me not to do!)

So when I saw this, and then tried them, I knew right away I had a heavenly yummy cream puff replacement, that is pretty healthy!
And not to mention it is extremely easy to make these gems. But much apology for not taking more step by step pictures. Most of my cooking ventures are done when I am home without my hubby around and my girl is napping, so when my fingers get messy, the camera is last on my mind. Sorry!

But like I said this is pretty simple.
First off, lay a sheet of wax paper or parchment paper on a baking sheet. Then you get your bananas, however many you have or want to use, at whatever stage they are at (unless they are really green, that might not super yummy). Slice them up (without the peel of course), then in the microwave heat up chocolate chips and peanut butter. I didn't follow the original recipe exactly, I just threw in the amount that looked yummy to me, so any consistency of the two will probably work great. When it is melted and smooth, somewhat quickly (before the chocolate sets again) roll the slices in the mixture fully coating the bananas and lay on the baking sheet. They won't grow, so you can place them as close or far apart as you want to fill up your pan. Then when all the banana slices are coated sprinkle some coconut on the top. Then throw them in the fridge or freezer to set and get cool and creamy.
Within 5-10 minutes you have yourself a bunch of yummy tastes of goodness. My husband doesn't like the harder form of banana (frozen), so for his we only had them in the fridge. But I tried a batch by putting them in the freezer for about 20-30 min and they had a nice "cream puff" sort of flavor to me, with that lovely banana having a nice creamy/ crunchy flavor. So to each your own of how you like your bananas, either way it is supper yummy....mmmm, makes me wish we had bananas right now, otherwise I would be putting this post on the back burner again to go make me some!

Lentil Soup

As I mentioned in last weeks post, I am going to share one new food venture, and a craft venture. So today is your lucky day in getting to see my first new food venture. I am going to be giving MUCH thanks to Pintrest (again, and again, and again!!) because this is probably where I will get most of my new ideas for recipes, mostly because the pictures are so yummy its a lot more enticing to make them than just reading a recipe from a book.

So in light of my new food sharing ventures, first off is: Lentil Soup! We have been graced with nasty colds at our house this last week, so something warm and nutritious was calling. All I did was type "Sick soup" in the search bar on pintrest and this one came up as the most appealing one on the list. And the part I love most about it is it has tomatoes in them, which are very high in Vitamin C. So if you have been so graced with colds and such at your place, or just want a most delicious soup, try this sucker out, it was simply AMAZING, and I will now add this recipe to our regular menu list, because it was REALLY that good!!

Sorry I am not very good at making pictures of food look as appetizing, but believe me when I say this stuff really was amazing! If you want the full recipe, and much better pictures, you can go HERE where I originally got the recipe.
Now there were a lot of things I didn't have the recipe called for, so maybe the actual thing tastes different that what I did, so if you want to see how I did it, read on. The black writing is things I copied and pasted right from the above website, things I changed or did differently are in purple writing.

Lentil Soup
2 cups black beluga lentils (or green French lentils), picked over and rinsed, I just used green ones1 tablespoon extra virgin olive oil
1 large onion, chopped
I didn't have any onions, but I am sure they would be really yummy in it!1 teaspoon fine-grain sea salt
1 28-ounce can crushed tomatoes
2 cups water
3 cups of leafy green (finely chopped) 

The original recipe calls for Saffron Yogurt (or you make it or something, I have never heard of it, and didn't have the ingredients for it, so I forgo-ed anything about the yogurt, but if you want to try it, go to the original website HERE.)
Bring 6 cups of water to a boil in a large saucepan, add the lentils, and cook for about 20 minutes, or until tender. Drain and set aside. I kept the same water that was in with the lentils, to hopefully save any nutrients that would have been in the water, then I added the rest of the ingredients except for the leafy greens. I let set on low for about 15-20 mins to let the flavors mix well, then I added the leafy greens about 5 mins before serving.

Meanwhile, heat the oil in a heavy soup pot over medium heat, then add the onion and salt and saute until tender, a couple minutes.(since I didn't have onions, I didn't do this part) Stir in the tomatoes, lentils, and water and continue cooking for a few more minutes, letting the soup come back up to a simmer. Stir in the chopped greens, and wait another minute. Taste and adjust the seasoning if need be. Ladle into bowls, and serve with a dollop of the saffron yogurt.

We ate this with saltine crackers, and then the next day leftovers with THESE oatmeal muffins (which are my ALL TIME favorite muffins, they are so yummy and so versatile with different meals!).

My husband loved this (Which is saying a lot, he is generous when I don't cook well and will still eat it, but I can tell when he REALLY likes something I made, he'll just keep going and going, like I've been starving him :), and my little girl ate a little bit, but she's such a funny eater, especially if it looks different, but I will give her time, I am sure some day she'll like it, because it was just so good.
