Sorry for being slow this week. I know it shouldn't make too much difference, but it does, but when my husband is in both school and working, it makes my life feel a little crazy too, especially with the one car. So because his week was crazy, mine was too. Oh well, such is life.
But this weeks yummy food venture is probably one of my all time new favorite treats! (I probably say that about every treat I share, but I guess I just like so much goodness out there, it's okay to have more than one favorite, right?)
It's been a while, but I pretty sure I found this on pintrest, but I can't find a link for it or remember where exactly I had the original recipe, so much apologies to the origanal somewhere out there, I would reference you if I could find you.
But on to this amazing goodness. I LOVE cream puffs, but they are ridiculously expensive, especially since they are SO tempting to finish in one sitting (at least for me), which can then make them pretty unhealthy to eat them all in one whack like that (which is extremely hard for me not to do!)
So when I saw this, and then tried them, I knew right away I had a heavenly yummy cream puff replacement, that is pretty healthy!
And not to mention it is extremely easy to make these gems. But much apology for not taking more step by step pictures. Most of my cooking ventures are done when I am home without my hubby around and my girl is napping, so when my fingers get messy, the camera is last on my mind. Sorry!
But like I said this is pretty simple.
First off, lay a sheet of wax paper or parchment paper on a baking sheet. Then you get your bananas, however many you have or want to use, at whatever stage they are at (unless they are really green, that might not super yummy). Slice them up (without the peel of course), then in the microwave heat up chocolate chips and peanut butter. I didn't follow the original recipe exactly, I just threw in the amount that looked yummy to me, so any consistency of the two will probably work great. When it is melted and smooth, somewhat quickly (before the chocolate sets again) roll the slices in the mixture fully coating the bananas and lay on the baking sheet. They won't grow, so you can place them as close or far apart as you want to fill up your pan. Then when all the banana slices are coated sprinkle some coconut on the top. Then throw them in the fridge or freezer to set and get cool and creamy.
Within 5-10 minutes you have yourself a bunch of yummy tastes of goodness. My husband doesn't like the harder form of banana (frozen), so for his we only had them in the fridge. But I tried a batch by putting them in the freezer for about 20-30 min and they had a nice "cream puff" sort of flavor to me, with that lovely banana having a nice creamy/ crunchy flavor. So to each your own of how you like your bananas, either way it is supper yummy....mmmm, makes me wish we had bananas right now, otherwise I would be putting this post on the back burner again to go make me some!
